  • 200g orecchiette pasta (or your preferred pasta)
  • 1 tbsp olive oil
  • 1 tsp harissa paste
  • 1 tsp tomato paste
  • 1 garlic clove, chopped
  • 5 cherry tomatoes, halved
  • 5 black olives, sliced
  • 1 cup butter beans, rinsed and drained
  • 1 tsp vegan butter
  • Juice and zest of 1/2 a lemon
  • 12 tbsp pasta water
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

1. Cook the Pasta:

  • Cook the pasta according to the packet instructions.
  • Drain and set aside, reserving 1-2 tablespoons of pasta water.

2. Prepare the Sauce:

  • In a frying pan, heat olive oil over medium heat.
  • Add harissa paste, tomato paste, and chopped garlic.
  • Sauté for 1-2 minutes until the garlic is fragrant.

3. Add Vegetables:

  • Add the halved cherry tomatoes and sliced black olives to the pan.
  • Season with salt and pepper to taste.

4. Combine the Ingredients:

  • Add the butter beans and vegan butter to the pan, followed by the lemon juice and zest.
  • Stir to combine and cook for another 2-3 minutes.

5. Mix in the Pasta:

  • Add the cooked pasta to the pan, along with the reserved pasta water.
  • Stir well to combine all the ingredients.

6. Garnish and Serve:

  • Sprinkle with chopped parsley.
