  • 4 tbsp flour
  • 4 tbsp vegan butter
  • 1 cup vegetable stock
  • 1 1/2 cups non-dairy milk
  • 2 tbsp coconut milk
  • Salt to taste
  • 1 tbsp chopped sage
  • 1 cup Honestly Tasty Sham Cheese
  • 1 tbsp Honestly Tasty Garlic Cheese
  • Nutmeg to taste
  • 2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • Pinch of mustard powder

For Mushroom Bacon:

  • Flat oyster mushrooms
  • Soy sauce
  • Liquid smoke
  • Smoked paprika
  • Maple syrup

Other:

  • Pre-made vegan gnocchi
  • Olive oil (for frying)

Instructions

Cheese Sauce Creation:

  1. In a saucepan, melt the vegan butter over medium heat.
  2. Add the flour and whisk continuously to form a roux.
  3. Gradually add the vegetable stock, non-dairy milk, and coconut milk, whisking constantly until smooth.
  4. Season with salt, chopped sage, nutmeg, nutritional yeast, smoked paprika, and mustard powder.
  5. Stir in the Honestly Tasty Sham Cheese and Honestly Tasty Garlic Cheese until melted and the sauce is rich and creamy. Set aside.

Mushroom Bacon Preparation:

  1. Slice the flat oyster mushrooms.
  2. In a bowl, mix soy sauce, a few drops of liquid smoke, smoked paprika, and a drizzle of maple syrup to create the marinade.
  3. Toss the mushroom slices in the marinade and let sit for at least 15 minutes.
  4. Fry the marinated mushrooms in a hot pan until crispy and golden brown. Set aside.

Gnocchi Cooking:

  1. In a large pan, heat a small amount of olive oil over medium heat.
  2. Add the pre-made vegan gnocchi and fry until golden and crispy on the outside.

Combine & Bake:

  1. Preheat the oven to 180°C (350°F).
  2. In a baking dish, layer the fried gnocchi and crispy mushroom bacon.
  3. Pour the cheese sauce over the gnocchi and mushrooms, ensuring everything is well-coated.
  4. Bake in the preheated oven for about 20 minutes, or until the top is golden and bubbly.
