For the Base:

  • 30g coconut oil, plus extra for greasing
  • Nut Option: 100g blanched almonds, 100g walnuts
  • Nut-Free Option: 150g sunflower seeds or pumpkin seeds
  • 100g soft pitted dates
  • Pinch of salt

For the Topping:

  • Zest of 2 lemons
  • Juice of 1 lemon
  • Nut Option: 300g cashew nuts (soaked for 1 hour in boiling water)
  • Nut-Free Option: 300g silken tofu
  • 2 1/2 tbsp agave syrup
  • 50g coconut oil
  • 150ml almond milk (or any plant-based milk of your choice)
  • Zest and juice of 2 lemons

Instructions

Step 1: Prepare the Base

  1. In a food processor, blitz either the nuts (for the nut option) or the sunflower/pumpkin seeds (for the nut-free option) along with the dates and a pinch of salt until finely ground.
  2. Grease a 23cm tart tin with coconut oil, then press the base mixture firmly into the tin. Place the tin in the fridge to set for about 30 minutes.

Step 2: Make the Topping

  1. If using cashews, drain and rinse them after soaking. Then, in a clean food processor, combine either the soaked cashews or the silken tofu with the agave syrup, coconut oil, almond milk, and the zest and juice of the lemons (reserving a quarter of the zest for later). Blitz until the mixture is smooth and creamy.
  2. Spoon the topping mixture over the chilled base, spreading it evenly.
  3. Return the tart to the fridge to set completely, which should take about 2 hours.

Step 3: Finishing Touches

  1. Just before serving, scatter the reserved lemon zest over the top for a fresh, vibrant garnish. Enjoy your lemon-infused raw tart, tailored to your dietary preferences!
